Pasticcini di Marisa
As promised in a past post, the cookie recipe from the barber’s wife. I had Sunday lunch with Pasquale and Marisa, followed by a baking session and another plate of cookies to get me through the next few days.
450g flour
200g sugar
200g butter
1 packet of vanilla
1 packet of dry yeast (lievito pane degli angeli)
1 tablespoon of cacao amaro
1 tablespoon of chocolate fondent
lemon zest
4 eggs
a pinch of salt
rum
chocolate chips
220C for 12-15 minutes, less if smaller
Mix flour, sugar, vanilla and salt together in a bowl
Add yeast
Add butter by slicing it and mixing it in with your hands
Whisk eggs in a separate bowl and add lemon zest
Add eggs to flour and butter mixture and integrate until dough form
Remove some of the dough into a separate bowl
Add cacao and rum to smaller portion of dough — mix to create swirl
Add to rest of pure white dough
Grease cookie sheet or layer with oven paper
Use spoon to form small balls and place on cookie sheet
Add chocolate chips to the top of each cookie
Bake
Enjoy without restraint!
